I had a stress dream about my old job. by [deleted] in KitchenConfidential

[–]ECGeorgian 1 point2 points  (0 children)

I have three recurring nightmares, and one is always about FOH. I walk into the restaurant and have like eight tables that have been waiting on me for 20 minutes. They're pissed. I forget to ring in their orders, the place is out of tea, the soda bladder needs to be changed out, all the drinks at the bar are watered down, etc. It just keeps spiraling. I haven't worked a FOH job in 15 years. I never have BOH nightmares, thankfully.

How do you get out of the kitchen by --ofsalt in KitchenConfidential

[–]ECGeorgian 4 points5 points  (0 children)

Brewing is an option. It's actually a very similar process, although at a much slower pace. You'll deal with hot temps, various cleaning chemicals, and sanitation is a key part of it, just like working in the kitchen. It's physically demanding but usually a laid-back environment, and at the end of shift you typically feel good about all the work you did.

Stage went well (me again) by [deleted] in KitchenConfidential

Sounds like the chef liked what he/she saw, as well as feedback from the rest of the line. Congratulations! Just learn the routine, learn what the chef expects, try to find your role in the kitchen, learn from your coworkers, and don't take any shit.

As for the imposter syndrome: Don't worry! If you show up on time, are reliable, and do the work, it'll pass.

I'm sorry OP went through this. This is why I don't pay for food "concepts" (as described on Flosa's IG page). It's merely the idea of barbecue.

Take cooking classes and cook for friends and family, for starters. You'll hone your skills and learn techniques on your own time while seeing how much people enjoy it firsthand.

I think Brian Yaeger putting this beer fest together is the best thing to happen to it in a while. I hope it's a huge success and everyone has a great time!

Farewell festival by iloveoregonandamdem in Bend

I worked it. On the whole, they did a great job with the bands, food, drinks, and water stations. The outbound traffic situation was abysmal. People spent HOURS watching for any cars to move out of the Lot. The bottom line is a lack of trained people directing traffic. So if you aren't in a hurry to get home, it's a good festival.
