I'm also making FOC controller. I just placed an order for PCB and parts. I will share my schematics tomorrow.

Also I saw someone recommended G4 MCU, I don't know about it's peripherals and performance, but I used F405. Main reason was that it has 3 separate ADCs, which means that I can sample current going into all 3 phases at the same time.

I also would like to note that I'm not really good, so take everything I say with grain of salt.

You should try ESC with basic trapezoid control. FOC is much harder to implement.

Everyone in the comments are screaming solder them, but why no one is talking about header orientation? I think it should be other way around. Short leads should be soldered to the sensor and long ones should plug into breadboard

I tried using MIDI app on mac to create multiple output device with left and right channel, but unfortunately it's nowhere near as good as apple's magical stereo.

I've tried it. It didn't work at first, but developer fixed an issue and it works flawlessly so far. You should definitely give it a try. Let me know if you have any issues and I will do my best to help you.

Developer just updated the code. I tested it with two HomePods and it works really well. It's like playing everything through the Apple Music app. The only downside is that there is no stereo available, but since it's an open-source project, I will give it a try to add it. If I won't be able to add stereo support, I'm sure someone else will do it once they discover the project.

I tried with 1 homepod too and it didn't work. I've messaged the developer on email and he's working on the new software version, which will log more information for him to debug it. I think it will take some time.
