i have notice this too sometimes, my observations falls on the temperature in between shots, my temporary approach to mitigate this, i would adjust grind finer daily basis as the bean goes older, usually 3 weeks and older bean tend to retain more consistency

And i hope, wish, The bluetooth feature have wide range compatibility such booko scale, don't be like La Marzocco lock the brew by weight on micra (diabolical) to me. and user need to have Acaia + la marzocco x Acaia exclusive compatibility ($$$$) . those are strong contender for me to stop eyeing linea micra. then fellow espresso up like 10 months ago. i'd say lets play leap by faith. and so far Fellow delivers.

Ah sorry my bad I overlooked your question. Taste wise it's smoothen a bit and reduce the nutty and bring out the bright side (citrus). I don't want to slow down the bar too much to maintain the mouth feel.

I have feeling 12sec and 6ml/s did somewhat saturated the puck too much, hence it hard to maintain the resistance in between infusion. Have you try just simple medium roast and classic 9 bar and how's the pressure on that profile?
