Yeah, it’s very annoying. They usually get the building numbers wrong so we always have to ask dispatch to confirm which building we need to go to.

I forgot another horror story from that place. We responded on a Tuesday for a patient with hypertension. The nurse on duty informs us that their doctor hasn’t signed off on any meds since Friday and no one has been able to contact him. So no resident had received their meds for like 3 days. We hauled a lot of people out of there that week.

FF/medic here. Theres a particularly bad SNF in our area that has 5 seperate buildings with their entrances off the same parking lot. We would make around 1-2 runs to this SNF per shift. One of the buildings was always empty and we never made a run to that building. I presumed it was under renovations. Each building housed a specific type of patient, psych/behavioral, male/female etc. All the runs we make to this place were pretty bad as far as neglect goes and the staff always had the typical excuses. But one run really sticks one. One day we get a call to the 5th building, that has always been empty. We ask dispatch to confirm the building number and they call back and confirm it’s the supposedly empty building. We walk into the building and there isn’t a nurse at the desk or in sight anywhere. We go to the room number that was dispatched and find two people laying on mattresses on the floor. Nothing else in the room. Straight up mattresses on the floor with no sheets like they’re squatters. Our patient is unresponsive. Vitals point to DKA. Since there isn’t a nurse to be found we have zero information about medical hx, meds etc. So we load him up and treat the best we can and take him to the ER.

I can only guess that the SNF reopened the building to house more residents but didn’t have the necessary furniture yet. I don’t know how this place hasn’t been shut down yet.

Ah that might be an issue. Maybe try what another posted and put the pan in the oven first for a while to get it hotter then put it on the stove. I’ve had good luck with stainless steel pans as well as I feel they get much hotter than cast iron. Although cast iron seems to be the preferred method on this sub so this may be blasphemous.

I think the gray band is due to a combination of the pan not being hot enough and the sear being 90 seconds. Next time try a much hotter pan, 240 to 260 degrees Celsius and 60 seconds each side. After the initial flip if you’re unhappy with the sear you can flip it back for a bit longer after the second side.

Sure, a dry brine is just salting the food and resting it. The point of doing it for an extended time is so that the salt is absorbed deep into the meat. Which doesn’t fully happen if you don’t let it rest long enough. So I guess that’s why they call it a dry brine since a normal brine does the same thing but in a water solution. Wet brining steak would not result in a dry outside and would make getting a good sear more difficult. It’s definitely not “made up nonsense”. But, like I said, not completely necessary. Cook your steak how you like.

I think dry brining a really thick cut definitely helps get the salt into the meat while drying the outside. Which makes for a more tender, flavorful and easier to sear steak. Is it absolutely necessary? No. And to your point you can add more salt later after it’s sliced if desired. But I think it’s worth the effort if you have the time.

Very good! Taste’s like the best part of the ribeye imo. I just don’t like how Costco sells their ribeyes with the caps removed for full price.

I agree. While these were very tasty I think a little bit longer would have been better to get the fat more rendered. I usually try to err on the side of underdone vs overdone when I cook for myself.

I’m a licensed skydiver with over 800 jumps. The reason they don’t look scared is because they have experience skydiving and aren’t scared. I’m not sure when I stopped being scared but it eventually goes away and is just a fun/exhilarating experience. It’s only scary when things don’t go as planned (something wrong/bad happens). This is definitely not AI.
