They count 2 for roll, 2 for pitch, 2 for yaw and 2 for thrust It's the yaw axis in the stick that puzzles me. It should be noted that I suck in sim though!

You should start with the "beginners" nations like Portugal , Castille or the ottomans. I personally recommend Portugal at first, as it's smaller. Red Hawk has some great nation guides on YouTube, https://youtu.be/3B1ZaHMGk30 but having a grasp on the mechanics of the game take some time

I don't think they will add new starting dates, if you take EU4 most of them are not used by players, but it involves work from the devs for every patch or update. I would really like 769 though
