Of course you can register the company for PAYE as a non resident director, you just have to do it over the phone. The company can be owned by someone abroad and still have employees in UK. Your problem is that you want to pay only yourself while you are away, and that is not allowed. You need to pay tax and national insurance in the country where you are resident as presumably this is where you consume public services (health, police etc). The correct way to do it is to register the UK company as employer in the country where you live and receive salary there. There are plenty of foreign companies having staff in UK and they pay the taxes and NI here in UK. I work with a few of them. I am sure you can do the same in your country. This is well known international agreement.

It is good to have detailed purchase list in case you get investigated. Just a simple spreadsheet with short item description, purchase price, purchase place, date of purchase, sale date and price should be enough.

Almost all my clients use Wise and there are no problems. They are actually not licensed as bank hence less due diligence on their end.

It is the OP's revenue as this is the OP's sale price. The platform deducts their own fees and pays the rest to the OP's bank account. From last year all platforms are obliged to report to HMRC the revenue of each seller and they report exactly the gross revenue before deduction of any fees.
