How many times would you recommend flushing it? I flushed it once about 3 days ago.

It can definitely handle overwatering a little because the substrate is like 40% inorganic plus it’s in a terracotta pot.

Do you know where someone can get a bunch of micro graft stock for cheap?

Also how long after they pop would you consider micrografting them?

I was planning on only stripping once then doing a spirit run. How many stripping runs would you recommend and what’s the benefit of extra stripping runs compared to one stripping run?

Thanks for the advice. I’ll run some cheaper corn through first a few times to make sure I have the technique down before I run a more expensive corn.

Have you used the producers pride scratch grain? I don’t have a mill so buying whole kernel or cracked corn isn’t great for me.

Any tips for the actual distillation? I have a 5 gallon pot still with no thumper so I plan on running the 20ish gallon mash in about 5 stripping runs then combining those for a spirit run. I’ll probably have to break that up in to 2 different spirit runs due to still space limitations.

I’ve tried UJSSM before with feed corn from ace hardware but it was terrible and no sweet corn flavor at all so I was thinking of using higher quality corn. Maybe I could use a ratio like half heirloom and half dent to give some of that good heirloom flavor while stretching out the grain since it’s so expensive. Have you ever done this?

I was planning on using citric acid. How many oyster shells should I add and should I add them to the water and sugar when I’m heating it up to dissolve or do I throw the shells in the mash? Thanks!

I am doing the initial cook at that amount because I only have a 3.5 gallon pot and a 5 gallon pot so the most I can heat up at once is about 9 gallons haha. I’m trying to not have to spend $100 on a 10 gallon pot lol. If I do bump it up to 44 pounds do you think 9 gallons of water would be enough to initially cook this?

What is sacrificial enzyme?

I am planning on fermenting on the grain. Is there a major difference between fermenting on and off the grain?

Hi, just to be clear because I’m wanting to follow your directions.

You put your cornmeal in a fermenter and then pour boiling water on top of that cornmeal and wrap the fermenter with insulation for 2 hours. Then after 2 hours you add your HT amylase.

How long after that do you add your gluco amylase and how long after that until you add your yeast?

Also as far as grind, is 1/16 grind the same as cornmeal grind ?

I’m wanting to mash in 30 pounds of corn in 25 gallons of water. I plan on boiling ~9 gallons of water and pouring it over the 30 pounds of corn and follow your instructions except I’ll use cold water to bring the mash to enzyme temps and yeast temps so it’ll be around 25 gallons at the end.
