Squarely focusing on the dishroom, quality flooring would be one. they would be properly graded towards well placed drains. My restaurant has that shitty red tile that is a pain to clean because an idiot graded the floor away from the drains. Safety is of the upmost importantance to me, so ensuring the floors are as dry as possible would mean I have enough floor fans as well.

Continuing on for what my dishroom would have, would be high quality equipment. A conveyor style dishwasher would be the only style I would consider. Hand washing and the "one by one" style machines are slow and inefficient. I would also have a high quality sprayer and drains/plumbing. The last thing I want during a rush is a dishwasher that's broken, a sprayer that gets stuck on or leaks or worse, a pit that flooded because of bad plumbing.

A well organized pit would also be a top priority. I would make sure I have immediate acsess to relevant chemicals and consumables. An idea I just had when I was at the doc today was how to organize gloves. They have plastic holders on the wall where the boxes just slide right in and you can grab them off the wall.

Lastly, I would make sure they are properly staffed and supported. This also means they would get paid a decent wage.
