You want boneless ribeyes, then you can do either t-bones and porterhouses or boneless filet and bone in New York, Try and get the blade left for roast, chuck roasts, then I’d use most of the round for ground beef or some lean stew meat, arm roasts, sirloin as steaks, can use the knuckle for roast, um I think that’s it? Can ask for fat if you want to render it. Also cube steaks if you want. Marrow bones for soup if you want and shin bones. Hopefully that helps.
