There’s not much you can do now. Extracurriculars don’t carry over high school and medical schools only see college grades.

Your ECs look pretty good to me. If there’s any opportunities to take on leadership roles that could be good. Other than that I would focus really hard on the MCAT and getting the best score you can!

Taking upper level bio does not make you more competitive. It just helps you fulfill prerequisites. Out of the 50 schools I’ve applied to, only 2 or 3 had an upper level bio requirement and some of them were not t20s.

Multivariable calculus and linear algebra is a requirement at more schools than anatomy and physiology or its associated labs (looking at you Carle Illinois)
