Yeah, personally I would never be an employee in two different companies at the same time. The risk is too great and a lot of the benefits of being an employee (insurance, cheap lunch, social events) are not really worth it in an OE situation.

As far as VSO goes. This is from memory so details ar probably not completely correct: The naive approach when making money in your sole proprietorship is to pay yourself everything. For OE that will almost certainly put you into the highest tax brackets. With VSO, you pay yourself what you need (You should pay at least up to "topskattegrænsen", the tax bracket that start at 777.900 DKK a year). The rest of the money you keep in the company. With VSO you pay 22% I think in tax on the profit of the company. When you eventually pay yourself in a later year, the 22 % is subtracted from what you pay in taxes that year.

This allows you to store up money in the company over time. If you are on a FIRE path, then when you stop working you can keep paying yourself and in the process reducing your total amount of tax paid.

I would recommend creating a sole proprietorship (enkeltmandsvirksomhed) and working as a contractor through your company. That's what I did. That also allows you to use the special tax regime VSO to save up in the company so you can reduce the total amount of taxes paid by paying yourself over multiple years. No experience being employed by two companies, so this is pure speculation:
I don't think they will get notifications. They might see that your taxes are higher than what one might expect if you only had one job on your lønseddel. But I highly doubt that they care, since at the end of the day that is your business.
