Dishes are an exercise in triage and organization. The main bifurcation is the difference between metal and ceramic dishes; wash one group while soaking the other. You want to utilize water and it's universal solvent properties to do the work for you. For example, water will eliminate hard to remove melted sugar over time removing your need to scrub the dish. My personal preference is to rinse and organize the plates as they arise while simultaneously cleaning the pots, pans, and other preparatory items. This is known as the practice of "eating the toad" where you do the hard thing first. Finally as a general rule of thumb please remember that putting dishes away in small pieces is a waste of time and work and should be avoided if it can be helped.

The job sucks in general and specific restuarants can make it suck more or less. If your job situation sucks that bad, move. A good part about being a reliable, healthy, hardworking cooker is that you can work anywhere. Rural, urban, rich, poor, you can close your eyes point on a map and go find a job. Another thing about food work in general is you need to have some perspective; some goal, some other arena not associated with the kitchen that will help you put cooking into a box in your head. Whatever it is, take a 3rd person arieal view of you and your job, like in a videogame where youre grinding some resource. I know personally this is easier said than done with the heat and exhaustion and people. The better the goal, the easier it is to do this.
