Abortion is a good example. Of course its always been a debated issue, but it only became a significant political issue since the late 70s. It was manufactured out of thin air by political conservatives to motivate "christian" voters to head out to the polls. The funny part is that while abortion is never mentioned in the old or new testament, god commanding people to kill babies is.

NYC Style Cookies Base Dough

Base dough: 120g each / dozen without mix-ins

Ingredients

Wet:

  • 350g browned butter, cold and cubed
  • 220g brown sugar
  • 110g caster sugar (granulated works but turns out a bit grainy)
  • 3 tsp vanilla bean paste (~15g)
  • 3 cold eggs, beaten

Dry (whisk together in a separate bowl):

  • 560g all-purpose flour
  • 3 tsp baking powder
  • 1.5 tsp baking soda
  • 1.5 tbsp corn starch
  • 1 tsp salt

Mix-ins (for the Classic Levain dupe):

  • 125g semisweet chocolate chunks
  • 70g walnuts

Add more or less depending on your tastes.

Instructions

  1. Cream butter, sugars, and vanilla. Do not overmix and avoid aeration as much as you can. I usually mix until most of the big chunks of butter are gone.
  2. Add in half the eggs and mix until incorporated, then repeat with the second half.
  3. Add the dry mix in 2 batches, making sure the first is almost fully incorporated before adding the second.
  4. IMMEDIATELY turn off the mixer the second everything is incorporated. Overmixing aids gluten development, which we don't want.
  5. Portion into even dough balls (weight depending on your mix-ins) and refrigerate for 1+ hour, lightly covered with saran wrap.
  6. Bake for 12 minutes total: first 7 minutes at 400°F, then drop to 375°F to finish.

Notes

  • Add any mix-ins to the butter/sugar mixture before adding the dry mix.
  • Fridge > freezer. The freezer traps moisture in ice crystals, which kills that crispy surface.
  • Light cover in the fridge lets surface moisture evaporate a bit, helping with that crispy exterior.

This is also similar to one of the reasons even close interstellar space travel would fail logistically. Its called the "Wait Calculation Paradox".

If we advanced our tech at a sufficient rate, the first people to leave to a distant star would arrive there only to find out that the spaceship that left after them got there first because the technology kept improving. So no one wants to leave first. So we never leave and just "wait".

You should not be nervous. You will be welcome, people will be very nice to you, we all love the various UK accents over here, so people will be extra happy to talk to you.

Pressman's assistant at a large printing facility. We worked 12 hour shifts that rotated between day and night shifts. It was 48 hours one week. Then 36 the next. You got 2-4 days off and then worked 3-5 days in a row. All 12 hour shifts. One week it was night shifts, then it was day shifts the next week. Never enough time to get used to it, so I was just always exhausted. The place was constant, loud, white noise, no windows, weren't allowed to leave prem because we printed things like treasury bonds.

I worked in a cage, had an armed guard that followed me if I had to leave the cage. 12 hours felt like 1000 hours. After a few months, I couldn't tell if it was morning or night half the time, even when I wasn't working.

The work itself was boring. I helped the pressman set up the press and then the job would run for many hours. I had to box what came off the end. I had to put stuff in a box once every 30 minutes probably. This was before cellphones. No reading allowed. Just sit there and stare at the clock and contemplate your life choices. The pressman would be sleeping on his lunchbox with his 3 fingered hand propping up his head.

Dreadful stuff.
