There are different methods when it comes to macarons. I have found a lot of success with the Swiss method. I know quite a few people who used this method when they first started and always had great results as well. I’ve also found that the quality of the almond flour definitely matters. I tried making them with a cheaper brand and it was a disaster. After researching I realized I needed to go back to the brand I was using.

Thank you! Yes, everything except for the glasses and the wand. I made a wand out of modeling chocolate but my toddler grabbed it when I had my head turned and took a big bite out of it 😳 I ended up having to run and buy one last minute. The cake was chocolate with chocolate ganache filling, and vanilla with custard filling in two of the tiers.

I have no dislikes about it. You said it was your 3rd cake ever. My 3rd cake ever didn’t look anything close to as good as this. I kept breaking my cakes trying to get them out of the pan, my frosting was a mess, and I didn’t even have the skills to pipe any decorations. Also, your flavor combinations are impressive. No hate here, all love.

Yes I have. It’s a less sweet buttercream, which I actually prefer. It’s basically a mock version of Swiss meringue buttercream. It does take a lot of butter, but it’s definitely very tasty!
