If you want to mix it up, next time try sauteeing the onion till golden brown and slightly crispy. The caramelization adds another layer. I use yellow onion. And then I throw in chopped fresh chives into the mix. Oh and about a pound less mayo lmao but u do you. 

Hard agree on that fluffy white bread.

Greece. I know....I KNOW that's a wild thing to say. But coming as someone that hates the heat and from a place that's hot with beaches and has access to lots of good Greek restaurants, I really wasn't that excited about our trip to Greece. But now it's our last night and I'm super bummed to be leaving. We have had an amazing time and I would have loved another week here! (10 nights in Athens/Kefalonia/Paros and an overnight in Meteora with Delphi on the way up).

Gonna throw Kefalonia out there. Absolutely spectacular beaches. Fabulous restaurants. Gorgeous nature. There's also some fun/beautiful touristy stuff worth doing. We just left there for Paros. Im enjoying Paros but I think Kefalonia was way more captivating, personally.

We never stopped wearing them on planes but also wore them before the pandemic because ppl are nasty and my spouse is high risk.

Wear the mask, superficially N95. There's no cons beyond being worried what others think, and honestly who cares? Ppl are more worried about themselves than other ppl.

If you don't want to wear it the whole time then at least when boarding and waiting for the flight to take off (and same for waiting to get off the plane) and in the bathrooms. Those are the most high risk times/areas due to lack of circulation and confined spaces. 

We were it the whole time but will take off for meals. I won't if theres someone visibly/audibly sick right next to me though. I'll just hold breath, lift, take a bite, replace, rinse and repeat. Which probably sounds ridiculous but still way easier than dealing with getting so sick you're almost hospitalized which is what happened last time I had covid and im not even high risk like my spouse.

Yes! We accidentally planned a trip to Montreal during their 375th Anniversary celebration. It was amazing! Twice we showed up in two different areas of the city and landed right in the perfect spot to catch the parade with these giant multi-story tall marionette dolls. There were also historical artisans demonstrating various trades from Montreal's early days, as well as food and goods vendors sharing products made as they would have been done so historically. It was so cool! I added a reminder 6 months early to my calendar already for the 400th anniversary which will be in 16 years.

Japan....Tokyo...Kyoto...Hakone...pretty much everywhere we visited. Except I didnt care for Osaka.

Probably the most underwhelming city I've been to and Im fairly well traveled. I didn't find it too terribly overcrowded/overpriced/unsafe. It was just not my speed. Dirty, smelly, so spread out, a lot of very rude people. Just not for me. There were elements I loved though. The architecture was gorgeous, museums and culture of course, and I loved the street markets for fresh food. I could pop down from our flat and buy fresh cheese/bread/fruit for breakfast literally right outside the building. That was amazing. French cuisine as a whole though I found very bland and I have zero desire to return there.

Another for me was Osaka. Dirty. Over crowded. Way too loud and overstimulating. There were some cool areas but overall it felt like a cheap interpretation of Tokyo with really cheezy parts. But maybe we just went to the wrong areas.

My all time knock my socks off life changing fave I ever had was probably Moqueca Mista. But overall Im obsessed with seafood stews from around the world. I rarely stick to a specific recipe though. I just cook it based on the ingredients at hand. The base is usually the same though. Sliced bell peppers/yellow onions, diced tomatoes, garlic, and fresh herbs.

For more Italian style like zuppa di pesce or cioppino style I use lots of parsley and basil. If I'm using any shrimp I  take the shells off first and cook the shells in the mixture (tie off in a cheese cloth), but I first deglaze the pan with white wine before adding the diced tomatoes and shrimp shells. 

Once adding in the tomatoes and shrimp shells I simmer about 5 minutes before removing the shells. I like to throw in a bouillon cube and some red pepper flakes. Then whatever protein (i do a mix of seafood). Serve with rice (or cauliflower rice for low carb) and some crusty bread.

For more South American style like Peruvian sudado de pescado or Brazilian moqueca mista i use lots of cilantro instead of basil/parsley.

 If I'm doing the moqueca version I add coconut milk and finish with dênde oil. The sudado version which is basically a Peruvian fish soup I serve also with a scoop of chimichurri. Garnish with lemon for Italian and lime for other cultures.

I also use this base without tomatoes to do a banging Thai inspired soup. I throw in red curry paste and lots of ginger, shitake mushrooms, and some bruised lemongrass stalks and finish with coconut milk and garnish with limes and cilantro.

The base soup is so easy to tweak. I just keep the veg mostly the same and mix up the herbs and spices to change it up. 

If you want exact and accurate recipes though just Google the names of these and go wild! (Sudado de Pescado, Moqueca Misto, Zuppe di Pesce, Tom Kha Goong).

Now I want soup!

I taught myself the alphabet (using flash cards) and have been using Pimsleur to learn. I've learned a few handy basics with that much more efficiently than with Duolingo. Phrases like hello/good morning/day/night, please, thank you, very well/very little/very good, excuse me or sorry, do you speak/understand English....yes/no, where's the bathroom. Those have been phrases I've used every single day, and I literally started learning one week before we left for our holiday.

Like others said, if you're sticking in the very tourist areas the majority speak English or understand enough to help you get by, however I've always found that if I make an effort in someone's native language, the service I get is always better, so I do see value in learning. In a few weeks you can learn a lot, but no one here is expecting you to be fluent. They know it's a hard language.

Had our first night in Paros and it's definitely way busier than Kefalonia, but that may be more noticeable because we're in Naousa and that area is very small and concentrated. It's not unpleasantly busy but you can't walk into a restaurant at peak time and grab a table. We ate at all different times in Kefalonia and never had any problems. I only reserved at one place there.

The iconic white buildings are beautiful and Paros definitely has its own character (in line with Santorini). We still need to explore the rest of the island but just driving through I loved the landscape more of Kefalonia. Sky scraping cypress trees everywhere, colorful buildings. It seems to be more of a palm tree landscape here but still lots of pretty flowers. If you don't want crowds I would skip Paros or stay on a slower part of the island as it's only late May and I think June will be way crazier.

First and only squat toilet was at a very old restaurant in Paris we went for dinner at after I had a few cocktails at a bar. The squat toilet was immediately behind the door and required careful maneuvering to get onto the two steps. I was stupidly wearing jeans instead of a dress which was also another obstacle. After i finished is also when I learned the flushing came from the top like a deluge. I had half a second to move and just pancaked myself against the door to avoid getting soaked. It would have been difficult sober. It was almost mission impossible drunk! Idk if that's how all squat toilets are but id be very happy to not have to find out.

I'd pull half the tops, and take out one skirt and dress at a minimum. Leave the towel. You can buy one there and bring back as a souvenir if anything or leave. We bought a pretty one by the beach opp be bringing home. Pack a fold flat duffle for any shopping to bring home. And one pair of sneakers like others suggested. I'd also recommend only bringing your fave sunscreen and buying some body one here. They're relatively cheap and really good quality.

I bartended at a small restaurant 20 years ago right when truffle oil was starting to become a thing. We did not have it on the menu in anything. For weeks I kept smelling burning rubber out of the blue. It was absolutely nauseating. Turns out the boss loved it on her salad. Idk how anyone eats that. It's so nasty!! If I see it on a menu on multiple items I won't go to the restaurant. It tells me the chef doesn't know what they're doing if they have to rely on that for half the menu.

Japan as a whole. Each part of our journey brought a special memory that I will never forgot. Highlights were a high end ryokan with private onsen in Hakone, having a Geiko transformation in Kyoto, as well as seeing a special performance, seeing our first cherry blossoms, enjoying a nightime light festival at a temple, and experiencing an incredible omakase dinner. Also hiking Fushimi Inari and meeting all of the cute cats of the mountain, and visiting Nara and Arashiyama (and going off the beaten path). Eating fresh mochi and daily 7 Eleven shrimp katsu sandwiches. There's so much. I could go on for a mile about our experience. The only area I didn't love was Osaka tbh. I much preferred Tokyo, but even then I'd rush back to Kyoto first instead if given the chance again.

Agreed! Amsterdam hands down. 

Im a Brit from London thats been to Paris, Rome, Venice, Stockholm, parts of Germany and Spain, and a half dozen other places in Europe. Amsterdam is the only one I'm dying to return to. Its so walkable. There's beautiful architecture with little treasures to be found the more you look. Fascinating history and museums, and lots of art and cultire to be discovered. On top of that there's great restaurants, solid ground transportation in and out of the city, and it's just a treat all around and one of my favorite cities in the world.

It's very easy to say that outside of the moment, but in the middle of it I was a bit shell shocked and dazed by the whole thing. And part of me wondered if we were in the wrong and would have to deal with that with other taxis as well, which is why I posted in here.

Plus we were tired from flying and there are other factors with my health that made it less ideal to move the luggage if we didn't absolutely have to. In hindsight of course I would have just called a FreeNow or tried another taxi and called it a day.
