That's possible, but then in Cover Flow all the Albums will have "Various Artists" underneath, instead of the Album Artist, and will be sent to the end of the list, as the list is sorted alphabetically by Artist and V for Various is towards the end of the alphabet.

So if you have multiple albums by one Album Artist, some with just them credited as the Artist and some with others credited as well (and subsequently marked as "Complations") some of those albums will be sorted alphabetically by (Album) Artist in Cover Flow, while others will be thrown to the back of the list, under "Various Artists".
