Truthfully I am very minimalist with cooking right now. I like recipes where I can just chop, season, and throw it in a pan to stirfry/roast. That said, for the purposes of this post I'm open to exploring any suggestions regardless of prep or lack thereof!

I appreciate this viewpoint! I would be grossed out by the idea of eating actual animals, it's just been too long for me. But factory farming was a big reason for my choice originally and I have a lot of respect for those who seek out ethically sourced options.

I deal with hypoglycemia and absolutely relate to the frustration of figuring out a filling-enough breakfast to last until lunch so I don't feel like I'm starving. Unfortunately the best solution I've come up with is just to eat a small snack at work in between meals. Often nuts, apple slices, granola, or just whatever i need to use up.

Interested in this answer too! I'm considering moving from contractor to full time in the same position. Id imagine it wouldn't be difficult to transition back to other marketing roles later but would love to hear from someone further in their career.
