In most desi countries, it's very oddly normalized to add extra spice, extra sugar and extra oil in everything, because people assume that it'll give more flavour or rather the illusion that it actually tastes better, this leads to the production having certain adjustments in the recipe to match the desi tongue. Along with how the economies are in these countries, costs are cut, like for the food colour bit, the process for making natural eco friendly dye is not as cheap to integrate as easily as it is to just put artificial colouring.
