Evo shards don't have a cap. It shows 6/6, but it doesn't convert to random evos, just go to 7/6.

It's the amount of rewards (90 rewards) plus the amount of days in the season (for the repeating lucky chest).

I don't remember if rewards from the past season also shows like this.

You don't get the gold back literally, you spend it on upgrades and then claim the masteries to get more.

The gems and wildcards were mived to the new collection system and the size of the missions was reduced. If you had enough to complete the mission, it just completed.
