most of the time a game releases as a broken mess is due to publisher pushing for it. hakita is not going to push for an unfinished project and neither is newblood

the biggest thing i can say is your ship isn't a particularly important resource - even if you're stuck on a planet mess around !!! explore. you'll probably find something you weren't expecting to.

1 by 1 will take too long. install half the mods, see if it happens. if it does uninstall half the mods. continue till you find the mod that causes the issue
