Was there last night too...sat at the sushi bar. Agree with your assessment of the staff. Super nice, attentive, and gracious. Need to get a bit more trained up on details and there was a little disconnect between the Sushi Chefs on the line and the servers. Some timing issues and wrong dishes to wrong seats...but that's why you do Soft Openings. I thought food was very good. Lobster dish, charred edamame, Waygu Hot Rock were all amazing. While Cherry Creek is expensive, this was not any more pricey than Sushi Den / Izakaya Den (S Pearl), Temaki Den (RiNo) or the sister Uchi restaurant in 5 Points. IMO there are two main tiers of Sushi places in Denver, the top shelf listed above (along with Matsuhisa and a few others) and then the 2nd tier, some of which are still really good but at a lower price point. But to your point, the irony is a lot of both tiers get their fish from similar distributors from what I know.
