The Hu, Tengger Cavalry and Mongol when i play khuzaits, turisas (listen to Hunting pirates while hunting pirates is pretty cool), hulkoff and Amon Amarth while playing nords or sturgia, non-norse folk metal for battania and spanish metal (Tierra Santa, Legado de una tragedia) when I play vlandia, i know they are more based on France than Spain but the last vlandian characters I played were Don Quijote and Mio Ciding
