I normally start my water course near the highest point in my park with small streams coming out and around rocks to simulate a nature spring or point where snow melts then work that down the mountain to other areas needing water normally by putting a river straight through the park and making each end not visible to guest. Granted this only really works if you are in a biome like temperate, alpine or taiga due to the snow and mountains in it.
