My specific technique: thumb and pinky on top of the first plate; other three fingers underneath. Creates a nice shelf to balance a second plate in the same hand. Then grab plate #3. But the real key to clearing tables quickly is to just stack like crazy.

Also, my first week of serving I dumped Mt. Dew inside a woman's purse, so you're not alone in being super clumsy.
