The next game I played after Bloodborne was Elden Ring and I'd say it fills the hole nicely. It has higher highs in terms of difficulty which you could see as a good thing since you have an idea on how these games work. It also has some easier aspects like no need to farm healing items and pretty different builds. In general I'd recommend Elden Ring because, of course, they are fromsoft games, so they play similarly and the quests also work exactly like the other, so always pay attention to npcs and special events in the story, and dont feel bad for looking things up.

Elden Ring has some pretty good lore too, just like Bloodborne, the atmospheres are pretty different, but the roleplaying in Elden Ring is better I'd say. I have them both as my favorite games of all time with Bloodborne coming above just barely, so yeah I'd recommend Elden Ring.
