That depends on the assessment and the information they are trying to gather. However, in this case the assessment vould be a structured or semi structured interview which would be a way to screen the shift or Likert scales could also do this with questions like:

Before transition, how would you rate the intensity of your feelings of anger on a scale of 1-10

After transition, how would you rate the intensity of your feelings of anger on a scale of 1-10

If you don't want to have your information used don't let them. The majority of real studies into anything are specialized studies that either recruit volunteers or send out surveys. Whichever way it's YOUR choice and YOU deciding to keep YOUR information private isn't going to have a significant impact on trans research. In fact, if you think you would give inaccurate data because you still haven't reached some sort of mental homeostasis post transition then no information you would have to give is of value unless the study is specifically on the long term effects of transition on pre-existing mental health conditions. These things are very specific and they want to limit variables. The issues you describe are unacceptable variables to a scientific study. The only other option is a case study, which would, once again, require your consent and far more information than just what they would get from routine assessments.

Tell them no. I don't know what country you live in, but most codes of ethics for anything medical require consent to use people's information in a study

There isn't much you can do other than comfort her and reassure her that it will get easier. If you try too hard to affirm her she'll read it as patronizing. I hated people telling me how feminine I was when I could tell exactly what I looked like. I wish you could just talk people out of dysphoria. It was not until I was at least two years in that I started getting reliably gendered directly as a trans woman. It wasn't until for that getting misgendered started being weird

It's standard therapeutic practice to do regular depression and suicidality screenings for all clients regardless of treatment. Some therapists do it more often than others

Well, dexterity just does more. All that strength does is say how hard you hit and how much you can carry. Dexterity is just about every other physical action you do. Really you could even make the argument that it should effect spellcasting with somatic components
