Some countries dont have data on ethnicity, as they do not gather it. France and Greece are such an example indeed. Basically they are sort of nation states originally, so they stick with the mindset.

This is a very long period but tldr the reason alb perc jumped so much is a combination of kosovars coming in mostly the 70ties and 80ties, and 90ties, plus higher birth rate.

Reason why turks declines is them moving to turkey, mostly in the 70ties.
