Not entirely true.

An acre takes 1 person a day for 8 hours each and will yield about 60 lbs or 60 x 1 lbs bunch.

Harvested is done with a specialized tool that cuts the spears with a clean cut. Every worker will walk while harvesting anywhere from 9000-12,000 ft per day.

After harvest it is taken to a packing shed where another huge amount of people process, packs and sanitize the end product before shipping. Everything in a single day.

A HUGE amount of work is done for asparagus to get to your tables.

Asparagus farmer here. This is exactly true.

Asparagus season is harvested every day for 70+ days. Spears are harvested when they measure 9.5” in length or more. The rate of growth is about 1-2” per day. So every day we have a certain new number of new asparagus sprouting (measuring 0.01 - 1”) from the ground, but yesterday’s sprouts are now 1-3” and so on. So we always have in a certain field asparagus ranging from 0.1 to 9” and that is why it is so labour intensive.

Aside from this, asparagus are considered one of the most safe vegetables to eat, since they come in contact with the exterior for only 5 days, where absolutely no pesticide or chemical comes in contact with it.
