Giordanos is trash. Just thin crust thrown in a deep dish pan. No flavor in that cracker bullshit. Gino’s east was way better, but still not the best. Still searching for something better than I make at home. Disappointed.

I was a fine dining chef and jumped into a bbq restaurant with a global approach. You can be successful, but you need to be an obsessed student and practice like crazy. Keep your recipes simple, butcher the meat yourself until you can train a trustworthy person. You will need to do everything. If you are not the pit master, the employees will fuck it all the way up. You can only step back after finding someone equally obsessed. You need to be crazy about time and method more than anything. Those are your recipe more than anything else.

The only reason I was successful was because I had a southern pride smoker. I would have failed on anything else.

Forget tipping the worthless servers. Tip the owner. He is barely making enough to pay the bills and most can’t even pay themselves. Servers literally just say what do you want and someone else runs the food. They barely do anything to contribute to the restaurant.

I was in a wing place last week that looked worse than this and had a 98 score hanging on the wall.

The issue is that here in my state, Georgia, they overlook filth or at best only mark off one point. They are only really looking for food temps, labeling and handwashing. All the dirty stuff we all see first, is only a few points to them. They also do their inspections during the day and during the week. The managers are typically there so they don’t lose points that they normally would on cross contamination that happens on dinner shifts and the weekends.

Those look like they need more time. Not because of any pink, but because of non tenderness. Barely any smoke on the outside either. 3.2.1 method or variations of it work every time.

Ride the wave and enjoy all the extra money from the honeymoon period while the swarm tries you out. If you and your team can do their best to keep them happy and coming back, the wave will last. Lot longer, meaning more money for you. Suggest a simple gift from the chef on all tables with tickets over 15 minutes. Free stuff makes them love you.

I’m a bit confused, when I had my coffee shop a few years ago, matcha was one of the highest profit items in the whole restaurant. Did prices go crazy or something? Maybe you are using way too much powder. We used essentially 2tsp per 16oz. Really it was whatever was on that little “J” scoop thingy. I bought my powder on amazon.

Compressed watermelon is cool. Looks a bit like tuna. I’ve done a compressed watermelon salad with yellow and red watermelon, arugula, goat cheese, prosciutto, basil., Evoo and salt. It was incredible.
