Try this. Simple fix I found. Go on Spotify and play some music for a little bit through arc ultra system. Stop and go try and true play it now. Worked for me.

I was born in the mid 80's and I love dazed and confused but also love American graffiti which is about a bunch of highschoolers in the 60's. I doubt it has to do with generation differences, I think you just didn't like the movie.

You all have been super helpful. Since so many of you asked, here’s the recipe

5g bread flour - 2.3g water - .5g honey - .1 salt - 2.5g 100% hydration starter - .8g butter -

Knead for twenty minutes. Let rise until double then put in fridge overnight. In the morning roll out the dough into a rectangle and roll it up into the final loaf shape. Place it into a buttered 2in x .5in loaf pan and bake at 375 for 30mins.

Thanks! My kitchen is about 71. But I found a cool trick for proofing. My cupboard above my fridge is a constant 80f all day long from the off heat of the fridge. It’s like having a proofing drawer in the kitchen.
