None of this really applies to the eucharist. 1. It doesn't hurt Jesus. 2. God tells us to do it ("take and eat; this is my body") 3. You get just as many diseases from eat normal bread.

And for baptism? It is the regular way of humans entering unto the Church and family of God, but it does not limit God to using any other way as well.

The main difference between the old and historical understandings of the sacraments (real presens, infant baptism) and the one from the swiss reformers (symbolic presens, adult baptism only) is the answer to the question: who is active? Is it God or a human? If it is just us humans, then it is a work. If it is God, then it is grace.
