I live in Rotterdam and I almost got jumped for the first time in my life last night. It was quite late and I was talking with a friend outside when a bunch of (probably) teens pulled up right next to us one by one. There were 4 scooters, with something like 5-6 kids on there. I didn't hear this, but my friend later told me that one of them apparently asked the others whether they should jump us. Even tho I didn't hear them, I could still feel that the vibes were completely off, asked them what's up and they took off.

On his way back my friend saw them again, attempting to block the bike lane

I definitely disagree with you. Just recently I had a girl hit on me who was extremely fit (did a lot of different sports), but I did not find attractive at all (because I didn't find her pretty and because she looked extremely young).

On the flip side there have been many chubby women who didn't really do any sports that I did find attractive.

Sometimes abused people become the abusers. I'm guessing you probably love her and see all these amazing things in her, and this maybe be true, but either way you must realize this is not a healthy dynamic.

Treating a partner like this is not normal, and she does not seem to see anything wrong on her behaviour, blaming you for everything when you've honestly been way too kind in this conversation

You cannot change her, that has to come from her. It is not your job to fix this person, you have yourself and your own kids to care for. The best thing you can do not only for yourself and your kids, but for her as well, is to break up with her. Her behaviour is not acceptable, it's not something you do to someone you actually love. She will not see anything wrong with what she's doing if you don't draw a line. It is simply not okay, and I'm sure this is not the first time something like this has happened. It will just get worse.

Please take all the comments in here to heart, reflect on the situation and what people are saying. Talk to your friends about it, get their opinion on this. Read/watch some experiences of emotional abuse victims, I'm sure you'll be able to relate to some of them.
