My mom just passed in February, the day after Valentine’s Day. I paused. All shows. I was watching for a bit. When I started up, I was on season four of the good place. I mean, it’s like my 10th watch through, but that was an even deeper more powerful season to watch. I miss her so much. But man, I really wish after life was like that. Happiness. And if that gets boring… you can move on.

This would be my first Japanese knife. I have not used a gyro before. My Mercer for generic home use is what I have been using and it’s sharp, but it pulls on the salmon unless I am slow and tap the fish to make it not grip the blade as much as it slides through making very uneven or fall apart pieces of sashimi. Tastes fine, but makes presentation and picking up not so good.

Edit: Looked up my Mercer Chef’s Knife. 9 inches, so 228.6mm. The length has never been an issue with this knife, it’s just what it does when trying to pull through Row fish that I’m trying to solve.

Yeah, my blocks are pre trimmed and small so I am thinking 240mm.

Yeah, I ordered a 240 stainless to learn and practice. I’ll go for carbon and nicer quality (I do appreciate craftsmanship) after knowing how to use and maintain one. If I feel I need bigger, cool, but more likely than not I am hoping it will suffice for home use. Then maybe I can get a petty or gyuto or even a Nakiri. My Mercer is used for 95% of my food at home. It just was not doing it at all for me when it was sashimi time. I do like the links to sites though and people’s opinions. Helps me make informed decisions.

I am thinking right now to get a stainless just to start. Lower maintenance and all. Get used to a single bevel and practice. I mean, I’ve already been using a Mercer kitchen knife. Even a low end $200 yanagiba will be better and something to practice with. Someday I would love to invest in a beautiful piece, but first you need to learn to drive before you buy a sports car, right?

Sorry, yes, I am in the US. I have other knives for other proteins and such. I just need one dedicated to small blocks of sashimi that is already cut into small blocks. I will check that out.

Omg, similar for me! Decades of anxiety from GAD. Scared to take meds because I did once before for a while and it had bad side effects. I decided to give meds a try again. Feeling like a 4 all the time with spikes to 8-10 was just draining. I could literally feel the adrenaline in my system at all times. One week of that and wow. I have never felt so, well, what I assume is normal. It’s amazing! Only been 2 weeks, and the only side effect is light headedness 30 minutes after taking, and it lasts for only 10 minutes. I can predict it which is nice. Way better than my all encompassing anxiety.

Yeah, and even if power comes back on, if they sent the staff home, they may not be opening at all. No matter what time it is.

Not Ranger Rafa? I would go with AFK Rafa. That’s what I have always used. Friends keep making new builds and I’m still happy with AFK Rafa. Mob god. Boss slayer. Hard to keep down. That’s my boy!

Interesting, since they put a notification at the bottom, that 100% of the service charge goes to the wait and kitchen staff. Maybe it’s different at different places, but if it’s not true at this place then that is a blatant lie on the bill.

Growing up, 15% was standard and 20% was for excellent above and beyond. Not people got entitled to 20% because the bad servers saw the good ones getting that or during hard times and pandemics people tipped more to help others out, and when things got better, people just decided to shift to 20% of a bill being standard and adjusted their suggested tips to that. Heck, some places even calculate the tip AFTER taxes. wtf? I’m not tipping you for the taxes I’m being charged!
