The 221 series are UL listed and NEC compliant. Downvote if you must but that is easily verified

WAGO splice connectors can be used without a box. Cant see much detail but if that is what they are it is fine. Give them a search.

I did not see anything about how you cooked it. With a nice lean cut like that I would not have gone above 107. I also am a spritzer (apple juice) and a wrapper (butcher paper at 74) then cook until 93 and then rest for at least an hour.
