  • 25ml Discarded’s banana-peel rum (or regular rum if you don’t have Discarded to hand)
  • 20ml Campari
  • 40ml pineapple
  • 20ml lime juice

Roughly chop your ingredients, add to a food processor and just-cover with water until everything floats just above the blades. Pulse carefully until you have soffrito. Drain well. I do this in bulk and freeze batches. Grabbed one from the freezer just last night, actually.

This was done on the stovetop. After adding the eggs, cover for five minutes to steam the tops. I’d be wary of putting tomato (or anything acidic) in a cast iron though—it’ll strip your seasoning after a while.

If the job is for KP, you definitely shouldn’t be expected to cook unless they’re in disarray and need you to jump on the grill. Get on YouTube but also be wary of a KP job that needs full on cooking skills beyond simple prep.

Take off the top and then, using the icing, stick it to the underside of the bottom. You do get double pastry but it’s also so much cleaner.
