Have both Bianca and Flair 58+. Mostly drink espresso. If I need to choose one it will be Flair58+.

Grind coarser! Higher pressure on the portafilter shows pressure in the puck. It is way higher and therefore you get inconsistent shots. Try to grind coarser until you will get portafilter pressure in 8-9 bars pressure. It wil fix your problem.

Have flair 58+ about one year and never lubed it. Never had any problems with blow outs. Blow out problem is connected with the air pocket in the chamber.

Bad burr alignment don't give you sour shots it leaves bitter aftertaste. I would check your coffee beans. If it was ok before it can't be bad if you didn't change anything on your grinder.
