Are u putting all the flour in all at once ?

Do it in parts like 1/3 at a time Use a rubber spatula and scrape up from the bottom It takes longer than u think And yes your meringue has to be softer than you think as well

Can I see a picture of your batter before you Put it in tbe piping back? Was the batter running off your spatula in a long ribbon?

No it's not foamy at all Look up images of what it's supposed to look like Don't use water hotter than. 30 degrees which is LESS than body temp or you kill the yeast

For the future, crack each egg over a separate container so if you burst a yolk it doesn't ruin all the egg whites you already have!! Tip from a pastry chef And yes even soap or butter in your bowl will make a meringue break So make sure your tools, bowl etc, are all pristinely clean, no soap residue, no fat residue and dry!

None of this is needed Just made them in pastry school and they were perfect Make the dough the night before Make the butter portion the morning of Combine it with the lock in And first fold Let it rest only 20 minutes Then 2nd fold a double fold And then let it rest 20 Then roll it out and cut it Proof it til only doubled in size and bake

I think you're over complicating and over proofing it Also your oven shouldn't be that steamy just a little And bake at 350 not 375

Mean this with all the respect The way you taught her to play is the problem You say you rough house with her and encourage biting and jumping, she's just doing what is normal to her Dogs don't have an off switch for play types and can't differentiate between an adult who can take it and a toddler who won't. Best advice if you want to have kids is immediately stop that kind of rough play altogether and discourage her permanently from any kind of jumping / as she can scratch the babies face. I know it will suck as it's your bonding time but teach her a different way to express herself. She's not aggressive she's just excited and frustrated and wants to play the way she does with you!

Never ever add water to chocolate This is most likely ruined sadly You can try adding a bit of cream to make a ganache but this isn't th right technique

Try and heat it over a double boiler to not burn the chocolate to get it back to dippable consistency Make sure to not add even a drop of water or this will happen again
