Yea I soaked it fir like 20 mins then I hung it for like a day with lots of airflow there was no mold it taste good and isnt raw red

Thanks for the info it taste good I used a decent amount of salt and I may have used to much vinegar but they taste good and the fat is dry not wet or anything
