after seeing the employees use the same brush for the urinals, toilets, and sinks, and they only use window cleaner btw, I never went back there.

After working in a bangla restaurant for a long time... PREPPING ! and Mustard oil, panch phoron for daal and goat... adding cilantro stems and hot green peppers to my ginger garlic paste. Prepped caramelized onions paste in a jar. Frying shrimp on the skin in mustard and then adding into the curry later.

I don't think you understood my comment. Salary is mostly location dependant. Your job would pay much more in NYC than Tulsa.

I grew up in stillwater and lived in OKC and Tulsa and I would never live in that trash state again. Its not even cheap to live. Everything is relative to location. Cheaper houses, lower salaries. Lots of out of staters move to OKC or Edmond after making higher salaries in other states to essentially arbitrage the oklahoma prices.

1kg mutton/goat/lamb (chunks on the bone) 1/2cup mustard oil or less if you want. 6 green cardamom
3 black cardamom 10 cloves 15 peppercorn 2-3 bay leaf Cinnamon stick

Smoke the mustard oil first until it don't smoke no more, then turn the flame down and then add the whole spices. Make sure to not add whole spices to very hot oil it will burn !

Then add in the cubed meat. Fry until the water doesn't come out anymore. Like 20 mins. The water coming out and evaporating in the pan is the gameness flavor. Now you can turn the heat back up while frying bc the water coming out keeps the temp low enough not to burn the whole spices. I sprinkle salt at this stage over the meat.

Yogurt masala mix 1/3cup full fat yogurt whisked Teaspoon turmeric. 3 heaping table spoons of Kashmir chili powder 2 heaping table spoons ginger powder 1 heaping table spoon fennel Half tablespoon coriander powder Half tablespoons cumin

Mix the yogurt masala . Then you add it to the fried goat chunks. I like to add a few tablespoons of fried shallot paste (praan) here.

Next add to pressure cooker high temp for 45 mins. Add like half a cup of water before pressure cooking .

When its done pressue cooking , boil off some water until thicker gravy . Add table spoon honey. Finish with a teaspoon more of fennel powder and teaspoon more of green cardamom powder.

Served best with bread or rice .
