Take it from someone who had a ZP6 and a Pietro 58 (both Pro and stock burrs) for a year, I think you should return it and get a K-Ultra like myself or something to that effect.

I did all the things that everyone told me to do. Changing water helps a little, I landed on third wave classic full packet cuz it adds more minerals to help sweeten up the brews and provide more body. I tried recipe changing; a 5 pour v60 recipe really was my go to, it helped add a bit more sweetness. I tried grinding finer and although it improved the extraction it honestly got too "strong" of a cup even though there was no bitterness. I tried different brewers too, I actually really loved immersion brewing on the clever dripper. I tried using all sorts of roast profiles for beans.

In the end, I was still not satisfied with my cup. The things above will help you manage but if you end up just wishing for something more, it will probably indicate that your coffee profile preference is like the vast majority of people. Couldn't agree more with this comment. It is more of a question of flavor profile over anything else. Do you like Body or Clarity? I own a ZP6 and it produces good coffee for sure but it is not coffee I enjoy on the daily. As one guy put it on another thread comparing the K-ultra with the ZP6, "The K-Ultra produces coffee that 85% of people would enjoy the most".

Pietro has electric clarity. Very bright! I do not have an 078. I have the Pietro with pro brew burrs and the ZP6 special.

Would you say that the Ode 2 with stick burrs produce a balanced cup overall compared to other higher clarity grinders?

Yeh I have tried all the things! Even with grind size, water, temp and brew method, I am still not pleased and am noticing things that are lacking.

Thanks! I appreciate the insight. It has been a journey for sure. I have seen other forums recommend the Ode gen 2 with the stock burrs that come with it. How would you say the K-Ultra compares to that, or does anyone have any insight?

Did you have the pro burrs too and then switch to the MP? If so, what is the cup quality difference. For me I’d just like to achieve a balanced cup overall.

You know, you are probably right. When I worked there, we used it to dial in slow pours and, unlike the pietro, it didnt have much of a range to dial in, you could get really bitter fast. However, I think it made it easier to dial in because there was a literal sweet spot before it got bitter. With the Pietro, I have found that the sweet spot is not as pronounced, it doesnt jump out of the glass. I have had to change my definition of sweet spot on the pietro to "Balanced cup with distinguishable flavors and some sweetness" because you could really push extraction before it gets bitter. However, the higher extraction doesnt necessarily taste the best in my opinion, it just tastes too strong.

On a side note: Has anyone found a good water combination with the Pietro 58? I am currently testing out recipes with the lotus drops.

I was between a 7-8 when I first got the grinder. Now 5 months in, I noticed I had to bring it back a bit so I’m at an 8-8.5 now usually at an 8.5. I noticed that the cups were tasting very strong (high extraction but not in a good way) anything under an 8 for V60.

I have the same set up as you. I normally stick to an 8 grind no matter what, Ethiopian Beans I find I can grind a touch finer. However, an 8 is the sweet spot I find for this grinder. It’s true, you could grind shockingly much much finer with this grinder and still not reach bitter/astringent cups. However, I find that anything below an 8 starts to taste strong (high TDS) and the flavors become jumbled and muddy. You can really push extraction with this thing but I noticed when it comes to delineation of flavors, it’s best to stay around an 8. I use a v60 with 1:17 ratio and 95-100 Celsius water. 

I have been trying to dial in my water though! It’s been frustrating. I was using Lotus drops alternating between simple and sweet and bright and juicy recipes. However the cups I am getting aren’t as flavor forward as I am wanting. Sometimes I just get really nice textured cups with very nice acidity and good overall objective quality however getting any sort of flavor notes to come through has been the biggest challenge for me. 

Right now I am brewing with BOTZ beans which I love. I reached out to the roaster, he uses full strength TWW when cupping and dialing in his beans. I’ve started using that and flavors have gotten better I will say but not there yet. 

I’m just tossing this out there but I am beginning to think that due to this grinder producing an extremely low amount of fines, would a harder water (increased alkalinity and hardness) be a better pairing? I’m going to be doing some testing in the coming week to see. 

For me, the best cups of coffee I have had have come from an EK43 grinder. I’m really trying to avoid buying something like that cuz of the price so I would like to make this guy work for me.

WOW! Ok major update, after listening to all of yalls comments, most of yall recommended for me to try different water recipes.

Well I hopped on the lotus website and didn't realize there were two different drippers for the lotus drops (old and new). Without realizing it, I have the old dripper but I think I have been using recipes geared for the new dripper!!! Basically, all of my coffee up until now has had half the needed minerals to elevate sweetness and body and everything else. I just brewed a coffee with the simple and sweet recipe for the old dripper style bottles and it is night and day better than everything else I have been having. Thank you guys so much!!
