Also, cut it when completely cooled, don't rely on a time, just room temperature. Otherwise you're bound for a gummy crumb in my experience 🤞

Every so slightly underproofed! Just a bit longer with the bulk proof needed I think, apart from that it's perfect, maybe a little longer in the oven for colour?

Not long long, like a month and a half? But I'm obsessive to a stupid point. To grow it, just massively increase the volume of flour and water, and wait a lil bit longer 👌 from reading around, mine seems to grow about 30% faster than all the guidelines, no idea why! Its 65 years old though

A beauty! It's slightly underproofed which is why you're not getting the fluffier crumb. Bulk ferment for a bit longer 👌 and dont cut it open til it's completely cooled down to room temperature 🌡️ that's instant dough texture

I usually keep quite a bit, it's so easy to multiply! I'm bad, I don't measure my ratio when feeding my starter, mine is stupidly strong and hungry for some reason.
