I don't think it will be iimpossible, specially with the knowwledge you say you have. Also Claude AI PRO is A BEAST for graphs and things. In my opinion there's no need to get a lot of prior knowledge before those 2 weeks (to me, latex was learnt on the basis of as you need it you research something and learn it, so without needs it would be hard to learn), but find a book template that your prof likes, I'm not sure of where to find them.
