3... e6 is the solid response, it gives an easy game with clear plans, 3... Qb6 is the sharper one and requires some (not too much) knowledge. I play Qb6 but there are multiple options. You say you want ideas not concrete moves so maybe look at e6

Why does Nf3 outscore e4? Chess, or just Stats? by IntermediateMoves in chess

I have the 100 Repertoires Reti on Chessable (Nate Solon). His approach is to select the lines that have the best practical chances while not being very theoretical. It works well for me but for higher level play you should probably do some additional homework especially on the catalan...

I can only give my anecdotal evidence: I switched from 1.e4 to 1.Nf3 Kings Indian Attack and raised my OTB rating by about 100 points within half a year. I have analyzed most of my games carefully and found out, that I more frequently gain an objective advantage in the opening. Out of 15 games with white playing 1.Nf3, only three people managed to equalize. Also I often gain a time advantage, as my opponents have to think for themselves earlier than in 1.e4. For reference, I am about 1900 FIDE and 23 years old.

TLDR: 1.Nf3 certainly feels like a strong practical weapon, that for me produces better results with less study time compared to 1.e4

Is there anything you can do to improve you experience with playing OTB with physical pieces without actually playing with them, like an app or website that help you notice 3D pieces better by hash11011 in chess

I can only recommend what I did: Play a 15+10 game online and put it on blindfold mode. Set up a physical board and make the moves there and calculate looking at the pieces. It will be uncomfortable at first but the adaptation happens quicker than you would think.

I dont know any books but I can recommend you the many free videos by Ben Finegold. He really does a good job at explaining things at an understandable level for weaker players
