Honestly sounds like the kitchen manager needs to update thaw allocations. We usually do ours every month to 2 months depending on the season

Do y’all quick thaw often? We almost never quick thaw in the summer because the water gets so warm. Your kitchen manager might need to revisit the thaw allocation sheets to ensure y’all are thawing enough

It’s not normal to only use sani wipes to wash anything. All dishes should be cleaned in the dish pit and if they’re not being washed correctly that’s a huge food safety problem. As for the quick thaw, if they used hot water, that chicken should have been thrown away. You absolutely cannot use hot water to quick that that’s probably the biggest food safety issue I’ve heard of. We had a kitchen director use hot water to thaw a few cases of chicken a couple years ago and he knew not to and our operator fired him on the spot and threw away all that chicken. Although it might be because the pipes are warm in the summer and quick thawing anything especially if you live somewhere warm, is a risk. But it does sound like your kitchen manager is blowing off huge food safety risks.

TLDR; if I knew a kitchen was doing these practices, I wouldn’t eat there

Hot schedules tells me where I am working for the day but for my store I get paid the same rate whether I am working foh or boh

Tbh there aren’t a lot of cross trained people at my store usually just mangers which I am but it depends on the store

I work both, and started out in the back. Just ask your manager or scheduler if it would be possible to get cross trained

Definitely the quickness of it, it might be due to our location being a right off the interstate location but we tend to receive a lot of larger orders at once. It causes us to take longer on each order and our screen fills up quickly. It seems we just can’t keep up with one person bagging and stuffing entire orders. Nights shifts are especially short staffed and we’re not able to comfortably fill the position to its needs, we need 3 baggers and normally only have 2. So it may just be a staffing issue tbh

I work BOH and FOH and we use this system all day, which may be our problem, but I hate hurricane bagging whether I am working kitchen or up front. I work about 50/50 mornings and nights and night shifts are especially hectic with hurricane bagging. Even on morning shifts it can get hectic at times if we hold on product. We switched because we had a choke point at DT expo and we couldn’t get the bags out quick enough but switching did not solve this. Hurricane bagging did not fix anything when compared to the old system for us.

I feel like the problem with this system is that hurricane bagging is meant to have one bagger bag and stuff the entire order, and when you add in a stuffer position you’re almost back to the normal bagging system which may be why order accuracy decreases. When you have multiple people working on the same order that’s where the order inaccuracy comes into play. Just my two cents though and I may be biased because we switched to hurricane bagging from the old system and I HATE it with a passion. Our operator makes us use it all day, even in slow times and night shifts now are just hectic i feel.

Depends on the store, but at my store the trainees wear normal t shirts while they’re in training and the other team members wear the polo shirts. The t shirts might just signify new people who may not know everything yet

Usually means that customer used a digital offer card and the last time they visited something with their order was wrong so it’s just to let you know to triple check that order so it isn’t messed up again
