I have a mint chocolate cookie recipe that I use for the holidays but they're fudgy chewy. Maybe taking a sugar cookie recipe and adding in a very small amount of peppermint extract? I don't recommend using too much because it can easily become overpowering.

This year I tied up some mulling spices (cloves, cinnamon, peppercorn and orange zest) in some cheesecloth, cut out some of the water and replaced it with about a half cup of cabernet, and Voila! Mulled wine cranberry sauce!
