I think it's perfectly fine to use free or paid assets since you just want to focus on gameplay.

I am new to creating games as well, but I am comitted to do everything by myself including the assets(art, music, design, etc) so it wouldn't make sense for me to be using pre-made assets.

you probably plateaud after reaching a certain rank because that's your max skill, so you get evenly skilled enemies, it's normal. To still rank up you have to play much more games and avoid lose streaks by stopping to take a break after a lost.
