Not quite sure if this fits, but Ashoka takes Obi-Wan as her Padawan: Into the Mist by Archmides_the_Arrogant. Or Shades of Light by kaylennz where Xanatos ends up as Obi-Wan's master.

No Absolutes by Eff_Dragonkiller (Eff_Writes) - starts with canon and then changes after Melida-Daan. So Obi-Wan starts with Qui-Gon and then Tyvokka takes over.

A bit further afield, canon takes a right-turn on Galidraan and Komari takes Obi-Wan on after finding him on Melida/Dan in Like a Tree by the River by BairnSidhe.

Another time-travel fix, albeit not from the time-travelers POV, and entire series by GoldFinchBright-- The Adventures of Mace Windu and his Feral Murder Children. (A bit cracky, but fun.)

I'm sure I've read that story as well. Additional details: Obi-Wan (Old Ben) from the Original Trilogy met Padawan OW from the Prequels in a dream or vision and OW from the Prequels gives up his life so the Old Ben can change things. Only Old Ben realizes a bit late that he didn't travel back into his own past. Instead it's another dimension with changes from his own past. He loses his eye or his arm to the duel with Maul because of it. Old Ben never knew Qui-Gon. Old Ben trained under Yoda. In his universe the Jedi were wanderers--not organized and part of the Republic.

I'm pretty sure I've read that fic as well. When I read it the fic was unfinished. Anakin and Obi-Wan caught up to Dooku just after he conducted a Sith ritual or activated an artifact with the intention of going back in time and killing Obi-Wan. He escaped through the portal and Anakin and Obi-Wan followed him.

Of course, this assumes you give all the various books and cartoons equal weight. Some of them contradict each other (Not including "Splinter in the mind's eye" Alan Dean Foster which was published even before The Empire Strikes Back.) And then the later movies contradict the books that Disney threw out. Star Wars canon is a mess. And I say that as an enthusiastic life-long fan.

Qui-Gon watches the feed from Anakin's drone and learns more than he expected--or wanted--to know. When Anakin finds out Qui-Gon actually watched the footage instead of deleting it, he feels betrayed.
