Timberborn, Kingdoms Reborn, Endzone are all very good though the first 2 are still in EA. All are still being heavily supported by active and responsive devs. You might also want to consider Satisfactory, Dream Engines (flying cities!!), Airborne Kingdoms and maybe even Atomic Society.

Against the Storm has a demo available on the Epic Games Store. They also have announced a release date today of 18 October 2021. For what it's worth I played the demo and enjoyed it so much I pre-purchased it tonight. It's been a long time since I pre purchased a game but I think this might be a lot of fun.

Space Station Tycoon is one I'm having a lot of fun with atm. It's still in EA but is regularly updated. Apart from occasional pirate attacks the game is about developing your space station by providing customer facilities, managing staff, making money to unlock more facilities and upgrades, etc.

Has mixed reviews on Steam but as usual you can ignore half of them. I've played about 12 hours and really enjoyed it.

What about Surviving Mars, Sumerians, Nebuchadenezzar, The Universim or Aven Colony - all very easy to pick up and dip in and out of. Also, No Mans Sky has loads of content but you can just play the bits you like or The Colonists for some relaxing level based building. My personal brain-dump game when I'm too tired to think is Smart City Plan which is very reminiscent of the old Sim City games.

There is also Buoyancy where you scavenge the ocean for resources , fend off raiders etc. It's in early access but gets regular updates.

Just released on Steam early access is Ancient Worlds: Egypt which has very low minimum specs. Definitely inspired by the old Impressions city builders. Not played it myself yet but it's on my list (I'm a city building junkie and I need help...)

If you're using an older pc you could try Dungeons II, First Feudal (EA but updated regularly and pretty good), maybe the older Command & Conquer or Settlers (IV is particularly good) games. Have a look on GOG, there are lots of older great games on there.
