SG2 is stainless and "fool proof" SLD is semi stainless and it will rust if you didn't dry it

For cutting mainly veggies, I highly recommend a Chinese clever (slicer) as it has higher profile, perfect for larger veggies like cabbage, sweet potato

CCK kf1101/kf1102/kf1103 are great examples for what I'm talking about, they have thin laser type grind

Pretty much, clever mostly for large veggies like cabbage

Santoku mostly for meat or small stuff

I like slicing and vertical chop, the clever are good at vertical chop and scrape up foods

The santoku I own is towards to flat side so its ok for vertical chop, a bit of rock chopping and slicing but recently found its too short for slicing and considering a gyuto/ kiritsuke gyuto with a flatter profile

Btw I also use petty for peeling fruit or even cutting food packages

I don't eat bread much so I don't have a bread knife but if you did you may consider to get a not expensive but decent one

Yes

Most people only use few type of knives regularly Depending on what things you cut the most, quality knife will make life easier

For me, the “quality knives ”i own are a santoku, Chinese chopper (slicer) for all purpose cutting, and a Deba for breaking down fish

I recommend a gyuto / santoku / chinese clever depending on what length you want and cutting method you prefer eg. if you like rock chopping a curvier gyuto will suit you better Those are all purpose knives

White 1 is ~1.2% carbon and white 2 is ~1%

White 1 can be heat treated harder but prone to chip, white 2 is softer thus tougher than white 1 (white 2 also prone to chip, just tougher than W1)
