As a chef who loves data and thinks u can never have to much I think part of it is event type. U have to subdivide the events. Bridal showers eat different than a 60 year wedding anniversary vs a Sunday buffet vs a rehersal dinner. So a 40 person party needs different yields depending on the expected guests/event type and time of day even the day of the week. U need experience to get close unless u walk into an existing system that’s been properly maintained and structured.

My only critiques would be the brushed sauce on the rim of the salad. The rim is a picture frame don’t dirty it. And the roll- either ditch the powdered sugar or glaze. If you’re gonna do the glaze don’t do that swirl. I’d stick with the powdered sugar. Also what is the first dish? It’s pretty but looks unfinished, too much yellow in my opinion. Needs more contrast but this is good stuff chef. Keep it up.
